Jerk Soda Cake Flavour Drops
Lemon cake, iced. A citrus sponge sits over a dense, moist baked cake base, topped with a vanilla icing and a touch of meringue for an icing-sugar sweetness.

A concentrate rather than a premix: measured by the drop, with no glycerine sweetness of its own.
Where to start
One drop in 150 ml is the label's own starting figure. The icing note carries a long way, so a taste after the first drop tells you whether it needs another.
When to add it
In a hot drink, add it once the hot part is made: the shot pulled, the tea steeped or the milk off the heat. Stir it through before anything else goes in. In a syrup, add it on the way down, once the syrup has cooled to about 40 degrees. Heat takes the brightest part of a flavour first.
In a syrup
Stir 5 ml, a teaspoon, into a cooled 400 ml batch of simple or rich syrup, and about 7 ml of it flavours a 250 ml glass. How to make a flavoured syrup has both syrups, and the syrup calculator scales them.
