Simple Syrup Calculator

Pick simple or rich, say how much syrup you want, and this gives you the sugar, the water, the flavour and how much to pour. Simple syrup needs no stove, and neither needs a thermometer.

Simple syrup dissolves cold: shake the sugar and water in a sealed jar until it runs clear.

A 400 ml batch fills a $2 sauce bottle from Kmart. Syrup is heavier than water: a bottle takes its size in millilitres times 1.23 in grams of simple syrup, or times 1.33 of rich.

Brix is the grams of sugar in every 100 g of syrup, so simple syrup at 50 Brix is half sugar by weight and rich at 66.7 is two thirds. A refractometer that reads past 70 Brix will check a batch.

The pour gives a glass the same flavour as drops at the standard rate, so a syrup build and a drop build taste alike. Rich syrup brings more sugar for the same flavour, and keeps longer. The keeping times are house working ceilings rather than verified food safety claims: tip a syrup out early if it turns cloudy, smells sharp or grows anything visible.
