Jerk Soda Caramel Flavour Drops
Milk caramel, dark sugar. A thick, milky dulce de leche base carries a dark, sticky brown sugar depth, with a warm, oaky note running underneath it.
One note, concentrated, meant to go in a drop at a time rather than a splash.
Strength
This sits in the concentrated tier, not the premixed one: no glycerine, no spoon measure, just the drop.
Where to start
Start at one drop in 150 ml and taste before adding another. The oak note is the one that moves fastest as the amount goes up.
When to add it
In a hot drink, add it once the hot part is made: the shot pulled, the tea steeped or the milk off the heat. Stir it through before anything else goes in. In a syrup, add it on the way down, once the syrup has cooled to about 40 degrees. Heat takes the brightest part of a flavour first.
In a syrup
Stir 5 ml, a teaspoon, into a cooled 400 ml batch of simple or rich syrup, and about 7 ml of it flavours a 250 ml glass. How to make a flavoured syrup has both syrups, and the syrup calculator scales them.
